Fire fighters fire up the grill Sunday

CORNWALL — The process starts at roughly 6:30 a.m. as Fire Chief Denny Rheaume begins mixing the ingredients for the special – and highly secret – basting sauce. A couple hours later, more Cornwall Volunteer Fire Department members start arriving to set up the grills, get the charcoal going and prep the chicken for a morning of low-and-slow cooking.
Yes, it is time once again for the annual CVFD Chicken Barbeque, set for Sunday, June 26, from noon to 3 p.m. Come in any time during those hours to eat in or take out. This annual highlight features a half-bird, lots of sides and a drink for just $12. Hot dogs and burgers will also be available.
The chicken, however, remains the star. The recipe for the special basting sauce, which is sprinkled over the birds each time they are turned on the grill – and that is frequently – is known to just two people: the granddaughter of the longtime chief who created it decades ago and who is a captain in the department; and Chief Rheaume. Its liberal use throughout the cooking process creates a chicken that is moist and full of flavor.
The event, which also features all the big trucks on display, is held at the CVFD Route 30 station in Cornwall. Just follow the great smell, and it will lead you there.
