View from the Borderland: The nutritional problem with school lunch

Neshobe Community School reached a new watermark of sorts this school year, when more than 50 percent of the students qualified for free or reduced-price lunch. This sobering news came on the heels of the news that Rutland County, of which Brandon is the northernmost town, has one of the highest rates of childhood obesity and Type II diabetes in the State. In a report released in February 2009, Essex and Franklin Counties actually are in worse shape, being both poor and more rural. Addison Independent Almost No Knead Bread

Makes one double-size loaf

White Flour Recipe:
6 cups all-purpose or bread flour
1/2 tsp. instant or rapid-rise yeast
3 tsp. salt
1 1/2 cups plus 4 Tbs. (14 ounces) water at room temp
1/2 cup plus 4 Tbs. (6 ounces) beer
2 Tbs. white vinegar (cider and wine vinegar are also fine)

Table Talk: Otter Creek Bakery

Last Monday morning, Sarah Wood paused at the center table in the small Otter Creek Bakery kitchen to chew thoughtfully on a piece of whole wheat baguette.

"Want to try this baguette?" she asked, offering pieces around the kitchen.

"Is it sourdough?" asked Cindy, one of the bakers.

"No, just plain Gleason's Grains whole wheat flour. It's wheat-y," said Sarah.

On the Ball: Prescient Men’s Hockey Quotes, State Wrestling on Tap

It’s almost always fun to hear what athletes have to say after games. Yes, results can vary, but more often than not they come up with some nuggets. On Tuesday, for example, Vergennes Union High School senior Connor Merrill was really funny when he admitted that he had been distracted by a sign some classmates held up counting down to his 1,000th point — that’s in today’s print edition. That sign didn’t prevent him from reaching that milestone, BTW, for those who missed the news.

Middlebury Trailrunner: Brooks Road

The continued snow drought is keeping me in the higher elevations. That said – the snow is still great up there! This week’s ski is a winter variation on one of my running posts from last summer, the Sugar Hill Reservoir run. Start this ski tour in the Brooks Road parking lot,which is found about a quarter mile from Rt. 125 just east of The Rikert Ski touring area. This parking lot is a popular starting point for skiers, snowshoers, and snowmobilers.

The VPA moved quickly today, and the Division II boys’ basketball pairings were out by mid-morning. Vergennes, Otter Valley and Mount Abraham will all play on Tuesday at 7 p.m., the Commodores at home, and the Otters and the Eagles on the road.

PANTHER HOOP AND EDWARDS SPEAKS

Just a few quick notes today on the Panther men’s hoop game yesterday. Senior captain Tim Edwards was kind enough to talk to me for almost five minutes afterward and reflect back on his four years with the Middlebury College program as well as the Panthers’ exciting rally against Trinity.

Not everything fit in the article that will come out tomorrow, which will focus on how the Panthers came back from five points down with six minutes to go, and how Trinity used a smart game plan to put Middlebury in the hole.

Form, or as the guys on ESPN radio like to say, “the chalk,” prevailed on Wednesday night: the Middlebury, Otter Valley, Mount Abraham and Vergennes girls’ basketball teams all won their first-round Division II playoff games at home. Details on all, including a full write-up and photos from Mount Abe, will be in the Thursday paper.

With the dearth of fresh snow and thinning cover, I usually head for higher altitude terrain. While pleasantly surprised by the conditions at the Rikert Ski Touring area last weekend, I had a hunch that the cover would be even better on Forest Service 59, which has the advantage of being just a little higher up the mountainside. Skate skis are usually the best call in these conditions – it is hard to set the good deep tracks for optimal classic skiing when the cover is light.
