Meet the chef: Nathan Davis of Rough Cut

When you think of China and Chinese food, American-style barbecue probably isn’t the first thing that comes to mind. But Shenzhen (a city with almost 12 million people just outside of Hong Kong) is where chef Nathan Davis got his BBQ chops.

“There are a lot of ex-pats in Shenzhen who want Western food,” said Davis, who returned home to Middlebury in May after six years in China. “It was an upscale and popular place.”

In mid-November, Davis took over as head chef for Middlebury’s own barbecue restaurant Rough Cut.

Group gives kids 'passports' to the great outdoors

ADDISON COUNTY — Do you like spending time outdoors?

Most of us (kids and adults) answer, “Yes!” But when it comes right down to it, we don’t actually spend as much time as we might like outside.

“The statistics show us that about 50 percent of kids today play outside as they did in the ’80s,” sited Andy Paluch, executive director of Come Alive Outside — a non-profit based in Rutland. “There are so many things competing for our attention these days.”

Funky, fermented artist turns labels into art

Have you ever really looked at the labels of products you use every day? Try it sometime, you might be surprised. Sure some labels never vary from their branding, but on other products you’ll see the thoughtful work of artists that changes over time.

Take for example Mike Kin. He’s been drawing the labels for Aqua ViTea Kombucha since their first batch in 2007.

When you’re an executive chef, you never know when duty might call. That’s why Andrea Cousineau carries her chef knife in her purse at all times. It’s a MAC in case you were wondering.

“I go between four different restaurants,” said the executive chef of The Lobby in Middlebury, Park Squeeze and Black Sheep Bistro in Vergennes, and The Bearded Frog in Shelburne. “I never know when I’ll need it.”

Arts+Leisure celebrated it’s first full year in 2017. Twelve months, 52 issues, over 830 pages, all dedicated to arts and events going on in Addison County.

Having launched the new arts section as a supplement to the regular Thursday Addison Independent in May 2016, we only had half a year to review last year. This year reviewing all that went on left me breathless.

Take a snapshot of Middlebury’s Town Hall Theater today, and what do you see? A glamorous but comfortable 232-seat community space that hosts approximately 165 performances every year. Acts range from dog shows to films, local theater to professional operas, and everything in between. The theater and its staff are funded by a comfortable revenue stream supported by ticket sales and donations.

Chefs who really know what they’re doing make it look effortless. They move calmly over the oven flames, stirring and shaking pans with sizzling veggies, searing meats and bubbling sauces. They grab spices — add a dash here and a pinch there. There are no timers and no recipe books; they’ve got the flavorings and cook-times down to a perfect science.

Wait. That can’t be true. Everyone must need a recipe — at least at the very beginning — right?!
