Table Talk: Adventures in breadbaking

Recently, I got into a discussion with a friend about baking bread. He's been doing it regularly for a couple of years, and judging from the finished products that I've tasted, he's learned quite a bit in that time.

In the past, when I've tried to make bread, it's always failed to rise, or it's come out tasteless or too sweet or salty, or the wheatberries I've added come out toothbreakingly hard. My schedule forces me to edit the rising times or I make substitutions or just plain forget that I am waiting for my bread to rise. The variables are endless.

Duo plays the blues: Bristol's Lavoie draws big name to town

MIDDLEBURY — When Bill Sims Jr. and Mark LaVoie perform at Middlebury College and the Art House in the Marble Works this Thursday and Friday, it won’t be their first time playing together. Since Sims, a guitarist and vocalist from New York City, first met Bristol native and harmonica virtuoso LaVoie at a blues festival in Burlington back in 1992, their mutual interest in folk music and the blues has blossomed into a 17-year friendship and collaboration.

Clippings: Failure with wood cut to the quick

I’ve never met a household activity I just couldn’t do.

For example, I excel at opening jars. I’m the one who opens jars when friends are struggling with them. For this skill, I have to thank my mother, who all through my childhood exerted a death grip on jars when she sealed them, giving me ample practice opening them and strong fingers.

Rural towns push for broadband Internet

ADDISON COUNTY — Ten years ago, fast Internet access was more luxury than necessity. Web sites were simpler, people purchased music on CDs instead of online, and YouTube didn’t exist. But times have changed.

Internet access is quickly becoming a necessity of modern life. In the more remote areas of Vermont, this has created problems for people like professional data analyst Ed Nelbach.

“I’m miles behind those with broadband access,” said Nelbach, a Hancock resident.

Leicester to vote on lower school budget

LEICESTER — The Leicester Central School board has voted to adopt a proposed 2010-2011 spending plan of $1,400,086, which represents a decrease of $8,573, or 0.82 percent, in total spending from the current year.

The board met on Jan. 13 to finalize the budget, which will go to a vote on Town Meeting Day in March.

Pro wrestling to hit Middlebury

MIDDLEBURY — Pierre Vachon is a familiar face around town. He’s lived in Middlebury for almost three years and works as a bouncer at Two Brothers Tavern four nights a week.

But on Saturday, Jan. 30, audiences will get the opportunity to see him in another light: He’ll be competing as “The Beast” in a professional wrestling show that he is putting on at the Middlebury Municipal Gym.

Table Talk: Back to the books

Sometimes it's good to be told what to do.

No matter how great you are at cooking, inspiration isn't always going to be right at your fingertips. I find that mine comes and goes in waves. One day I'm incredibly inspired to cook, and all the separate pieces of a dish fall together perfectly with little or no planning. The next day, I'll look at the ingredients in the kitchen and can't see them as anything but ingredients. At those times I can barely work up the energy to Google a recipe, or look one up on Epicurious.

Whiting school budget rises, but taxes set to decrease

WHITING — The Whiting Elementary School board has adopted the proposed $508,318 spending plan for the 2010-2011 school year, which represents an increase of $17,632, or 3.59 percent, over the current year’s spending plan.

But due to an increase in the number of students in the school, if voters approve the budget on Town Meeting Day their education property tax rate would fall by 7 cents, from $1.20 to $1.13, according to Brenda Fleming, business manager at Rutland Northeast Supervisory Union.

Table Talk: Slow-cooker yogurt

I just couldn't let the dairy thing go.

Because for all of my cheesemaking attempts, I always had that nagging knowledge at the back of my head that I wasn't actually going to make cheese. Not when there's so much good cheese available right here in Vermont.

But I've been wanting to make yogurt for a long time. This seemed like a good time to do it, because the yogurt I like recently went back up to full price at the Co-op, after having been on sale for $2.60 for months.

Snapshots: Ellen Young

Ellen Young's yellow farmhouse sits on a rise of land in Shoreham, set apart from the road by a tidy stone wall. Inside, the wood beams of the living room hold paintings, and two old wooden wheels hang from the ceiling. All of the decorations in the room have memories attached, stretching back to a time when a small dairy farm and 30 cows could easily support a family.

Ellen grew up just a few yards down the road on a dairy farm run by her parents, Ada and Joseph Burgess. Years before, in 1888, Ada's parents had come to Vermont from Canada and bought the 300-acre farm.
